Hi Tim. I'm glad to see this article because I'm a sushi chef/part time trader. For me it's sad to see people dipping soy sauce too much and eating sushi with gari. If the customers enjoy eating that way, it's fine, but I just think people should enjoy the taste of ingredients than sauce.

It's sooooo true. I've haven't had the pleasure of eating sushi with any American who knows the proper Japanese ettiquite...and I don't want to seem wierd by "correcting" peoples' behavior. I'm sure the Japanese chefs and servers must cringe...it sometimes makes me cringe to see people drown a piece in soy and then mangle the crap out of such a thing of beauty as they try to eat it in several bites, spilling rice all over the place. There's a reason why authentic Japanese restaurants give a warm wet towell to clean your hands at the start of the meal - it's cause sushi is finger food. You're also supposed to eat every piece all in once bite, most people tend to fuck this up. Also, another sin is to put lots of wasabi in the soy sause...put a tiny bit on the fish if you like it spicy. But don't overdo it or you're insulting the chef. Another Japanese custom is to never pour your own beer...and don't let your companion's beer get empty!

I guess that it doesn't really matter if you're eating sushi here in America, though, as it seems that nobody knows THE RULES.

But if you do it right, the Japanese restauantuers will notice and appreciate you!
